Comments: Discard any unsafe food. The Health Division must be notified once a decision related to the disposition has been made.
Food Contact Surfaces Clean
Comments: Clean and sanitize all food contact surfaces that have been negatively impacted by the fire. Surfaces to be cleaned and sanitized include, the interior of the ice machine, the interior of the soft serve machine, the interior of the refrigeration, the interior of the cooking and hot holding equipment, the food preparation tables, the slicers, the cutting boards, the knives, beverage dispensers and other equipment. This list is not to be considered inclusive of all equipment / surfaces to be cleaned and sanitized.
Non-Food Contact Surfaces Clean
Comments: Clean and sanitize all of the non-food contact surfaces effected by the fire. The surfaces include, the sinks, the three-basin sinks, the shelving and the exterior surfaces of the equipment.
Clean and sanitize the chairs, tables and counter surfaces within the two dining areas. Clean and sanitize the shelving and storage equipment within the basement.
Improper Maintenance of Floors
Comments: Clean and sanitize all flooring, stairs, etc. that have been negatively impacted by the fire.
Improper Maintenance of Walls/Ceilings
Comments: Repair the ceiling damage on the first, second and basement levels. The interior surfaces of the building should be cleaned to eliminate the odor, soot and extinguisher residue.
Rooms and Equipment Vented
Comments: Repair / replace the ventillation equipment.
